Speaker Biography

Tsutomu Koitabashi is a food safety expert with extensive practical experience and specialized knowledge in the field. He currently serves as Head of Food Safety at Zensho Holdings Co., Ltd. He holds a master’s degree in chemistry and a Ph.D. in microbiology, and is engaged in strengthening hygiene management systems, conducting risk assessments, and promoting employee training.

His top priority is protecting consumer health. This is achieved through the control and monitoring of pathogenic microorganisms—particularly STEC and Listeria—and allergen management, supported by fostering a strong food safety culture. He also serves as a bridge between academia and on-site operations.
